所謂的豆角變色 ,是样煮指由生綠色變城熟綠色 。 生綠,豆角是样煮淺些的綠,在扁豆身上,豆角就是样煮有皮上還有些白色 ,白綠;熟綠是豆角深色,扁豆就是徹底的綠 ,濕水 ,發暗的綠。 明白嗎? 如果實在搞不清楚,你就把扁豆角先是用水焯3—5分鍾,然後撈出來瀝幹水再炒。一般家庭都這麽做 ,這樣省時間 ,也省油煙嗆人 。 還是搞不清楚3-5分鍾有多長時間,你就這樣估計: 扁豆放在已經燒開了的水裏 ,然後開著鍋蓋放進生扁豆,等開鍋後,再放小半碗生水 ,等這次鍋全開了 ,就算扁豆焯好了 。

可以搭配土豆一起燉。具體做法如下,首先準備材料:
土豆:300克、豆角 :100克 、蔥花 :5克、薑片:5克 、八角 :1個 、辣椒:1個、十三香:1克 、生抽 :3克、水 :300毫升、鹽:2克。

1 、土豆去皮切塊,豆角切段 ,蔥切碎 ,薑切片備用。
2、起鍋倒入,然後倒入薑片,蔥花 ,八角 ,辣椒爆香。
3 、倒入豆角,土豆,十三香,翻炒勻。
4、加入適量的清水 、鹽,然後大火煮沸,轉小火燉40分鍾。
5、準備一個幹淨無水的容器 ,把煮好的豆角盛出即可食用。
