9.煎鍋中淋入適量蔥油將老薑煸香。
10.加入加工好的青魚段 。
11.蓋上鍋蓋(避免水分過多蒸發) ,用文火煎烤青魚段。
12.待青魚段外層濕澱粉起殼微黃時,將其翻身 。
13.青魚段翻身後,蓋上鍋蓋(避免水分過多蒸發)繼續文火煎烤 。
14.將青魚段二麵均煎製成微黃色。
15.待青魚段二麵微黃時加入芹菜段,並將火焰略調大 ,將青魚段澱粉層煎烤成金黃色脆殼,芹菜煎烤至七成熟即可裝盤。
16.裝盤 :先將金黃色形如金牌的青魚段碼放在盤中 ,留出中間小方塊 ,形成‘古銅錢’狀 ,然後 ,將芹菜碼放在‘古銅錢’口中即可上桌 。
