1.雞腿肉去骨 。用微量橄欖油抹勻 。蒜味正反兩麵都需要抹.然後放置8-15分鍾
2.雞腿肉撒上鹽和胡椒。一般是小土手指撚一小戳鹽 。均勻撒在雞腿上 。做法正反麵鹽各3下。蒜味然後撒上胡椒 。鸡腿最後保鮮膜封上。小土醃製5-10分鍾 。做法ps有條件的蒜味話 。 。鸡腿想做出正宗些的小土感覺。。那麽買點食用鬆枝比較重要。西餐調理裏很多地方用到 。
3.芝麻菜洗淨。
4.熱水加入少量鹽 。菜豆入水煮熟。
5.菜豆撈出入冰水。然後取出待用 。
6.小土豆洗淨 。熱水加少量鹽。然後入鍋煮熟。撈出待用 。ps 。這個可以醃肉之前就做了。這張圖是煮好的小土豆 。之前入水的圖忘記照了。哈哈
7.小土豆對半切 。。菜豆去頭去尾 。對半切開 。待用
8.平底鍋大火燒熱 。入橄欖油。鋪滿鍋底。
9.雞腿肉入鍋。 。雞皮麵先入鍋煎。中火轉小火。3-4分鍾。
10.雞皮麵煎至焦黃 。。翻麵 。然後放入2枚大蒜 。2-3分鍾。ps喜歡重口味的可以多胡椒醃製雞腿肉 。然後此時再多加大蒜。
11.小塊黃油放置鍋上沿 。然後小土豆微煎。1分鍾
12.然後出鍋裝置鐵盤或錫紙上。準備入烤箱
13.烤箱預熱。170度。5-7分鍾 。ps小土豆在雞腿肉底下會吸收肉汁 。口感軟綿。小土豆在鐵盤或者錫紙外沿會焦黃。口感香脆。自己可以調節。
14.一小塊黃油 。中火化開。然後入菜豆。。
15.菜豆微炒1分30秒左右 。出鍋待用。
16.雞腿肉出烤箱 。自己喜歡的分數切開擺盤。小土豆。菜豆擺盤 。鐵盤或錫紙內遺留肉汁澆上 。ps迷迭香草在此之前應該切碎 。然後芝麻菜切中小段 。加入微量鹽和胡椒拌好。然後雞腿肉擺盤完撒在上麵 。可惜這兩樣步驟忘記照相了。 。哈
